Celebrate Super Bowl this Sunday with a Specialty Cocktail

Whether you are a Baltimore or San Francisco fan, this Sunday’s Super Bowl is sure not to disappoint. But even if your football team didnt make it to the end of the season, you can still join in the team spirit of avid fans with these themed cocktails.

BALTIMORE RAVENS – THE RAVEN

the raven cocktailThe Raven is a dark and mysterious cocktail that adapted from other recipes. I like this one because it contains ingredients that are more common in bars than those found in other Ravens.

Ingredients:

* 1 oz vodka
* 1 oz rum
* 1 oz blue curacao
* 1/2 oz Chambord

Preparation:

1. Pour the vodka, rum and blue curacao into a cocktail shaker filled with ice.
2. Strain into a highball glass filled with fresh ice.
3. Slowly pour the Chambord over the back of a bar spoon so it floats on top.

*The key to this drink is the layer which is rather easy to obtain in this mix as the blue shaken mix is much lighter than the Chambord and they rarely break the layers unless stirred.

SAN FRANCISCO 49ERS – THE BAY BOMBER

Crisp and refreshing like the city, it’s a drink every fan will enjoy!

Ingredients:

*2 tablespoons kosher salt
*2 tablespoons sugar.
*2 tablespoons ground fennel seeds

*1 lime wedge
*8 ounces gin
*2 cups chilled chopped peeled cucumber
*2 cups chilled chopped honeydew melon
*6 ounces fresh lemon juice
*1 cup honey
*5 cups ice
*Cucumber wheels and honeydew melon balls, for garnish

Preparation:

    1. Make the sweet fennel salt: In a medium bowl, mix the kosher salt, sugar and ground fennel seeds
    2. Make the cocktail: Moisten half of the outer rim of 6 chilled white wine glasses with the lime wedge and coat lightly with the sweet fennel salt
    3. In a blender, combine all of the remaining ingredients except the garnishes and blend until smooth. Pour the drink into the glasses. Garnish the drinks with the cucumber wheels and honeydew melon balls.

On March 23rd, 2011 the Hilton Los Angeles / Universal City hotel welcomes back the annual Hollywood Expo, hosted by the Hollywood Chamber of Commerce.

From the Kitchen: Mango Sesame Dressing

Executive Chef George Sit has his own personal flair for Pacific Rim cuisine. He shares yet another treasure with the guests of Cafe Sierra Restaurant, located in Los Angeles, CA.

Ingredients:

  • ¾ cup vegetable oil
  • ¾ cup chutney
  • 6 tbsp unseasoned rice vinegar
  • 6 tbsp unseasoned rice vinegar
  • 3 bulbs garlic clove
  • 6 tbsp. light soy sauce
  • 1 ½ tbsp oriental sesame oil
  • 1 ½ tsp Djon mustard
  • 1 ½ tsp crushed red pepper

Preparation Method:

  1. Combine all ingredients in blender
  2. Ideal when used for sushi and sashimi preparation

From the Kitchen: Seared Pacific Salmon & Crab

Ingredients:

  • Salmon 6 oz
  • King Crab meat only 4 oz
  • Baby Spinach 1 Cup
  • *Lemon Butter sauce 3 oz

Preparation Method:

  1. Season salmon with salt, white pepper and fresh lemon juice. Coat salmon in flour then lightly pan sauté in butter.
  2. When salmon is cooked removed from pan and discard any left over burnt butter.
  3. Heat king crab meat in hot water bath.
  4. Sauté fresh spinach in butter.
  5. Set salmon onto plate, top with sauté fresh spinach, then top spinach with the heated crab meat and ladle over with lemon butter sauce.
  6. Garnish with desired sauteed seasonal vegetables and starch.
