From the Kitchen: Ceviche

SAVOR SATURDAY:

Executive Chef George Sit adds his own personal flair for international cuisine to every dish he prepares. He shares yet another treasure with the guests of Cafe Sierra Restaurant, located in Los Angeles, CA.

The Ceviche recipe is a variation from the traditional Mexican-style ceviche influenced by contemporary Mexican-California fusion. For best result, do not exceed 12-hours when marinating the seafood.

Ingredients:

  • 1 oz Fresh Halibut
  • 1 ozFresh Ahi Tuna
  • 2 Shrimp U-15 cooked
  • 2 oz Scallop 10-20
  • 2 oz Baby Octopus Tako
  • 3 oz Julienne Mango, Peppers
  • 1/2 cup Fresh Chopped Cilantro
  • 2 oz Thinly sliced jalapeno
  • 2 oz Lime Juice
  • 2 pc Bibb Lettuce
  • Thinly sliced tomato julienne
  • 1 pc Lobster shell
  • Garnish – Cherry tomato halves

Preparation:

  1. Thinly slice the fresh halibut, Ahi and baby octopus
  2. Marinade all the fresh seafood with lime juice, salt and pepper.
  3. Before serving, add julienne vegetables, Set Bibb lettuce onto center of plate, then place the top lobster shell and scoop seafood inside shell.
  4. Garnish with fresh chopped cilantro, julienne mango and cherry tomato halves.

From the Kitchen: Breakfast Granola

The Breakfast Granola is often featured on our weekly on the Jazz Champagne Brunch, hosted Saturday and Sunday mornings. See below for reservation information.

Ingredients:

  • 3 cups Old fashion Oats
  • 1 cup coarsely chopped pecans
  • ½ cup unsweetened shredded coconut
  • 3 tbsp. brown sugar
  • ¾ tsp cinnamon powder
  • ½ tsp ground ginger
  • ¼ tsp salt
  • 1/3 cup honey
  • 2 tbsp vegetable oil
  • 1 cup assorted dried fruits

Preparation:

  • Pre -heat oven to 300 degrees.
  • Line sheet pan with parchment paper
  • Mix first 7 ingredients in large bowl
  • Stir honey and vegetable oil in low heat until smooth
  • Pour over oat meal mixture and toss
  • Spread evenly onto parchment sheet pan
  • Baked until golden brown, stirring every 10 minutes. For 40 minutes
  • Stir granola, add in mixture dried fruit when cold
  • Store in air tight container

The Caramelized Chipotle Chicken is available weekly on the Seafood and Prime Rib Buffet, hosted Thursday thru Sunday nights. See below for reservation information.

Ingredients:

  • ¼ cup extra virgin olive oil
  • ½ cup thinly sliced garlic
  • 2 cups finely chopped onions
  • 1 cup ketchup
  • 2 tbsp djon mustard
  • 2 tbsp dark brown sugar
  • 7 oz can chipotle chiles
  • 1 tbsp lea and perrin sauce
  • 2 tbsp cider vinegar
  • ½ tsp cinnamon
  • 2 x 3 lb chicken cut 8 way each

Preparation:

  • Heat sliced garlic and onions in medium heat with vegetable oil
  • Add the garlic and the remaining ingredients except the chicken.
  • Preheat oven to 450 degrees and place chicken skin side up in sheet pan
  • Coat chicken in sauce and baked until golden brown.

From the Kitchen: Mango Sesame Dressing

Executive Chef George Sit has his own personal flair for Pacific Rim cuisine. He shares yet another treasure with the guests of Cafe Sierra Restaurant, located in Los Angeles, CA.

Ingredients:

  • ¾ cup vegetable oil
  • ¾ cup chutney
  • 6 tbsp unseasoned rice vinegar
  • 6 tbsp unseasoned rice vinegar
  • 3 bulbs garlic clove
  • 6 tbsp. light soy sauce
  • 1 ½ tbsp oriental sesame oil
  • 1 ½ tsp Djon mustard
  • 1 ½ tsp crushed red pepper

Preparation Method:

  1. Combine all ingredients in blender
  2. Ideal when used for sushi and sashimi preparation

From the Kitchen: Seared Pacific Salmon & Crab

Ingredients:

  • Salmon 6 oz
  • King Crab meat only 4 oz
  • Baby Spinach 1 Cup
  • *Lemon Butter sauce 3 oz

Preparation Method:

  1. Season salmon with salt, white pepper and fresh lemon juice. Coat salmon in flour then lightly pan sauté in butter.
  2. When salmon is cooked removed from pan and discard any left over burnt butter.
  3. Heat king crab meat in hot water bath.
  4. Sauté fresh spinach in butter.
  5. Set salmon onto plate, top with sauté fresh spinach, then top spinach with the heated crab meat and ladle over with lemon butter sauce.
  6. Garnish with desired sauteed seasonal vegetables and starch.
